Let's NOT mention the fact that Aunt Flo visited today, thus making it an exceptionally Fat Tuesday. I made a King Cake to celebrate Mardi Gras (aka Fat Tuesday) and plunged my woes into this baby....

ps. little baby toy still not discovered! anyone want some cake?

Let's mention Cooper's in a play tomorrow and Thursday... guess what he is? His class has written an opera... it's pretty cute actually.


Let's mention that Cooper has decided for Lent that he's not going to play Xbox for a month. He told me this upon arrival home from school. They learned about Lent and giving something up for 40 days today. So he said he had to play as much as he could today to "get as much in" as he can.... lol, any bets on how long he'll last?

Today after church....

Cooper was responsible for giving the opening prayer and sharing a scripture in Primary today. Before primary, I suggested that in his prayer he invite the Spirit to be there. We also picked out a scripture for him to read about Nephi being an example to his older brothers.

After church, I'm sitting in Relief Society packing up my things. Cooper and Sean come in and stand by me jabbering the way kids do after they haven't been with mom for a while. Sean gets distracted as usual and runs to chat with friends.

Cooper looks at me with all seriousness and asks, "mom, why does it feel like that in primary?"

"Like what?" I asked.

"I dunno. Like I feel good and happy inside," he struggled to find the right words.

"Well, when you said the opening prayer, did you ask the Spirit to be there?" I asked.

"Yes."

"Do you think the Spirit was there?"

"Yes."

"That's why you felt that way. We always feel that way when what we're doing, where we are, or what we're hearing is a true thing" I struggled to explain. (If ANYONE has advice for me on HOW to answer these questions better, please let me know!!!)

I hugged him and told him what a sweet boy he was for recognizing these things. Cooper has always had an innate knowledge and a sensitivity to the things that are right and the ways that are correct. We are SO glad for this older child and for his example in our family. From birth, he has brought a light into our home that we feel we don't always deserve.

Neither really

How old are each of you?
I is 34 and Nick is 30!

Whose siblings do/ did you see the most?
Nick's (they all live within 15 minutes of us, and one even lives next door!), mine live out of state.

Do you have any children together?
3 boys

What about pets?
1 cat, Mikan

Which situation is the hardest on you as a couple?
Sleep deprivation and stressful situations, like moving or making a major purchase.

Did you go to the same school?
We both attended BYU Hawaii at different times though.

Are you from the same home town?
Not even the same state.

Who is the smartest?
Nick is definitely... Nick is smarter at science, math, and retaining information. I am better at writing, spelling and stuff.

Who is the most sensitive?
I'd say Nick, he might say me?

Where do you eat out most as a couple?
Depends on our pocketbook situation. We love sushi, but we usually end up at the Training Table.

Where is the furthest you two have traveled together as a couple?
Seattle, WA

Who has the craziest ex’s?
Probably him.... I was too smart to date wackos!

Who has the worst temper?
I'd say him, but we're almost the same.

Who hogs the bed?
Me.

Who is more stubborn?
I think we're both pretty mellow and flexible.

Who is more jealous?
He USED to be, but neither of us are now.

Who does the cooking?
Me. Nick cooks maybe once a month, if that. He makes really tasty japanese dishes and great sushi!

Who is more social?
Me, by FAR

Who is the neat Freak?
Me, although after baby #3 i've been a slacker.

Who wakes up earlier?
Me, only because i have kids to get to school and nick needs his sleep!

Where was your first date?
Officially, we went hiking. It rained and Nick built me a fire.

Who has the bigger family?
He does.

Do you get flowers often?
On V-day usually.

How do you spend the holidays?
Usually with Nick's family or with friends.

How long did it take to get serious?
Like two weeks. We were made for each other!

Who does the laundry?
I do mostly. But he helps a LOT when he can.

Who drives when you are together?
Nicks does, only because I'm not a fan of driving. If he's tired or sick or wants to read, I'm fine with driving though, especially if I know better WHERE we're going.

Is your family still growing?
I hope so... but to be sure you'll have to ask him.

Aebleskivers



I must sing praises to this traditional Danish dish.

My mom bought me this pan last summer and we've made good use of it.

here is the recipe...

2 cups buttermilk
2 cups flour
3 eggs, separated
1 tsp. baking powder
1/2 tsp. salt
1 tsp. soda
2 tsp. sugar

By hand beat egg yolks. Add sugar, salt and buttermilk. Stir. Add flour, soda and baking powder.
Stir together. Beat egg whites til stiff and fold into batter.

Put a small dab of butter in each cup or use nonstick spray. Fill cup half full. Top with 1/2 tsp. applesauce and cover with more batter. Let brown, then turn.

Be careful and let cool a little. Applesauce gets very hot.

I've also made cornbread batter, cooked it in my pan with little hot dog pieces in the middle.
Or you can use Bisquick (add an extra egg or two) and fill with peanut butter and chocolate in the middle or jam (my kids really like ham n' cheese or banana and peanut butter)
